Between work and family life, finding time for preparing healthy food can be difficult
Often, we quit on the vegetables first. They are complicated; they need to be peeled, chopped and sliced. Often, we lack inspiration on how to cook the veggies. Particularly, it affects the evening meal, which is more easily served as briefly fried meat with only potatoes on the side – a rather tedious meal.
Most of us know the everyday bustle. The gourmet cookery may be tried in the weekends, if you can find the time, but never on a Thuesday evening before the kids’ soccer or dance lessons. Here we need meals that are more easily prepared.
Raw salads are both quick, easy and healthy
If we skip the cooking step and in stead serve our veggies raw, we not only conserve time but also vital nutrients. More vitamins and minerals are retained in fruits and greens, when they are used raw rather than cooked. Raw vegetables furthermore contribute with beneficial dietary fibers that maintain the natural movements of the intestine. Therefore, we all need to eat many more, fresh vegetables.
We recommend that you always have a basic selection of coarse vegetables available, such as carrots, beets and cabbage. This way, you have basic greens for a quick salad. Most of the recipes in this book also contain one of these basic vegetables as main ingredient.
